Coconut Cookie Sandwiches with Buttercream Wine Frosting

 

It's time to graduate from the classic cookies and milk combo. This pairing of tropical coconut cookies and a light wine frosting featuring Wilhelmina® Riesling from @winc is brought to you by CookieCutterKingdom. Mona of @merci.bakery made the wonderful cookies. Happy baking! 

 

Here's what you'll need:

-3 ½ cups all-purpose flour
-1 cup sweetened, shredded coconut
-½ tsp salt
-2 sticks unsalted butter, softened
-1 ⅓ cups granulated sugar
-2 tsp vanilla extract
-2 tsp coconut extract

(Add 1 teaspoon of baking powder and 1 teaspoon of baking soda if not using cookie cutters.)

For the frosting:
-1 lb. powdered sugar
-2 sticks unsalted butter, softened
-2 Tbsp milk
-2.5 tablespoons 2015 Wilhelmina® Riesling
-½ Tbsp vanilla extract

Directions:

Preheat oven to 350°F. Line two large baking sheets with parchment paper.

Blend coconut in food processor to get a finer shred.

In medium-sized bowl, blend flour, coconut, and salt. (Add baking powder and baking soda now if you aren't using cookie cutters.)

In separate bowl, use electric or stand mixer to combine butter and sugar until smooth. Add eggs, vanilla extract, and coconut extract. Mix until combined; add in flour-coconut-salt mix. Refrigerate dough for at least an hour.

Lightly flour your work surface; roll out dough until quarter-inch-thick. Use CookieCutterKingdom cutters to cut out shapes. (If you’re not using cookie cutters, roll dough into one-and-a-half-inch balls.)

Place shapes or balls on baking sheets. Bake for 12 minutes, watching to make sure they don’t burn. Allow to cool completely while you make the frosting.

To make the frosting: combine powdered sugar and butter in mixing bowl. Mix at low speed; slowly add vanilla extract, milk, and wine. Change speed to medium until frosting is fluffy.

Frost the cookies or make the cookies into sandwiches by using two cookies and frosting the inside! Enjoy.
